“Investigations into Plant-Based Meat and Factors Influencing Its
Likability"
The consumption of animal meats takes a heavy toll on the planet’s health. Yet, people are still not keen to transition to a reliance on plant-based meats. Marie’s project will use neural networking modeling to study connections between data from tests performed on the stiffness of different animal and plant-based meats and from surveys conducted to learn about people’s perceptions of food stiffness. This will require learning how to perform the mechanical tension, compression, and shear tests on the meats, work with stress-strain plots, use neural network modeling, create surveys on food stiffness, and collect data from the food survey.
